10With your palette knife, flatten out the top of the cake just as we did for the crumb coat. Firstly, spreading out the buttercream side to side using the outer edges of the palette knife, and then using one outer edge and turning the turntable to achieve a flat surface. This time we donât want the layer of buttercream to be as thin as before, so rather than pushing firmly down onto the cake, feel the resistance of the buttercream and glide the palette knife over, smoothing the buttercream out as we did when layering up our cake. If you push down too hard, you will take off too much buttercream and reveal the cake underneath. Youâre also aiming to almost push the buttercream over the edges of the cake so there is a slight overspill of buttercream. Once the top of the cake is smooth and flat, you wonât be touching it until the very end.
Whenever youâre applying a second coat of buttercream, the order is to start with the top of the cake, then smooth out the sides and then finish by cleaning off the corners. Every time you flatten out the top of the cake, the sides get affected. Every time you smooth out the sides, the top gets affected. This is why we decorate the cake in this order.
